Went on a little adventurous today. Wanted to try out and make my own version of Pad Thai! My boyfriend is part Thai and he owns a recipe book where I've gotten some ideas. Hope you all enjoy! Ingredients: 1 Red pepper 1 Green pepper 1 Tbsp Peanut butter 1/2 can Coconut milk Sesame oil 2 pieces of Chicken Oyster sauce (found in Asian stores) 2 Tbsp soy sauce 1 clove garlic 1 tsp salt 1 Tsp pepper Bean sprouts Green scallions ( for decor ) Rice noodles ( you can find them at the local Asian store or maybe publix international isle) 1/3 cups of brown sugar Directions : Roughly chop the chicken into little chunks. Add salt and pepper. On a pan add 1Tbsp of sesame oil let it heat up on medium. When pan is hot add the chicken cook until golden. Set aside on separate plate. In the same pan add both peppers after being chopped into slices. Cook for about 6 mins. Add the chicken back into the pan and set aside. On a big pot boil some water and add noddle cook for 8 mins. While that's cooking in a small pot add some sesame oil garlic, coconut milk, peanut butter, soy sauce, brown sugar, and mix well. When the noodles are done drain the noddle and back into the pot off the heat. Add the chicken and pepper mix , then add the sauce. Mix everything together. Serve on a bowl add the bean sprouts on the side and add the chopped green onions. Hope you guys enjoy this Asian Adventure!
