Yellow Peruvian Chicken ( Aji De Pollo)

Aji Amarillo

Ingredients:

2 chicken breast

2 Aji Amarillo (peruvian yellow pepper)

1/2 white onion

2 clove of garlic

2 tbsp Turmeric Power

2 hard boil eggs

3/4 cup evaporated milk

4 cups chicken stock

3 Aji amarillo (peruvian yellow pepper)

1/2 cup of olive oil

2 cloves of garlic (minced)

3 tablespoons walnuts (chopped)

3 tablespoons of Feta cheese

4 slices of white bread ( or saltine crackers unsalted one)


Directions:

Start by boiling the chicken in a pot with water , add the eggs in this pot too or you could boil them in a different pot. You can add little salt or you can do that at the end. Let it cook through while you start prepping everything else. In a soup bowl add the evaporated milk and place the pieces of bread in there to soak. Let that sit for the time you are prepping as well.


Start prepping the peruvian yellow pepper, I usually buy them in a jar from your local Hispanic market or some people call it latin market. It will be in a jar and should say Aji Amarillo. Take 3 peppers out of the jar and place them on the chopping board. Slice them in the middle in order to take seeds out. Roughly chop the 3 peppers and place on the side. I roughly chop all the vegetables.

Once finish prepping see if chicken is done and fully cooked. It should take 15-20 mins. Drain the water and let the chicken cool. Don't forget use the chicken broth you just made and set aside. We need to start shredding the chicken, I use two forks and start shredding the chicken in long thin pieces however, you could use your hands. Make sure to shred all the chicken.


In a pan add olive oil let it get warm for a couple minutes, then add the vegetables. Let it all sauté for 5 minutes. Now the fun starts... in a blender add all the vegetables with the oil, all the bread with milk, feta cheese, and the walnuts have to be roasted. ( in the same pan just add the walnuts in medium/high heat and cook them for about 5 min). Last but not least add the turmeric. I personally add the turmeric for a little health benefit that goes along with it as well as coloring. See if the sauce came out a little thick, it should not be liquid. Once everything is blend taste for salt and pepper. Add to liking.


In the same pot add the chicken broth and now add the mix from the blender you just finished. Start mixing while the heat is on low/medium. Once everything is incorporated add the shredded chicken and mix slowly. Taste for salt and pepper.


And that's your Aji De Pollo, now this is not traditional. Some things I added to make it a little healthier, and I took out some ingredients too, such as potatoes usually are part of this dish but for me the rice is more than enough. I will post the authentic recipe in another post.
